There is a famous saying among Japanese chefs, that "katsuobushi must only be shaved once the guest’s face is seen" (鰹節はお客様の顔を見てから削れ). This saying emphasizes the importance of freshly shaved katsuobushi, which quickly loses flavor once oxidized.
Traditionally Katsuobushi is used in blocks and shaved using a wooden grater box. Freshly shaved bonito flakes have a much more intense flavor than pre-packed flakes. The bonito flakes can be grated as needed and their thickness can be adjusted to one's personal taste. From miso soup to okonomiyaki savory pancakes or ramen noodles, one of the fundamental ingredients of Japanese cuisine is freshly grated katsuobushi, and is a must for a true aficionado of Japanese cuisine. The bespoke Kezuriki (鰹節削り器) uses Kakuri Sangyo's AOGAMI (Blue Paper Steel) #2 blade, making it an extremely sharp tool. The box will catch all of the flavorful, umami filled shavings and can be used as short term Katsuobushi storage.
To get you started, the Kezuriki is packaged in a beautifully designed ready to gift box, containing one Katsuobushi Kezuriki (Dried Bonito Shaver), one piece of NINBEN Hongare Katsuobushi Block Sebushi (220g) from JAPAN, solid wooden mallet to adjust blade, detailed instructions on how to adjust and troubleshoot your Kezuriki, a Katsuobushi shaving techniques card and a basic recipe card to make Awase dashi (合わせだし).
